Shiitake and Crimini Mushroom Risotto with Aged Parmesan and Chives

Description

Indulge in the rich, creamy delight of Shiitake Mushroom Risotto, where earthy shiitake mushrooms harmonize with perfectly cooked Arborio rice, enhanced by the umami essence of Parmesan and the final touch of butter for a restaurant-quality dining experience at home.


Ingredients

Units Scale

Risotto

  • 3 tb Olive Oil
  • 1/4 cup shallots small diced
  • 1 cup Arborio or Carnaroli rice
  • 1 cup dry white wine
  • 5 cups chicken or vegetable broth
  • 4 tb butter
  • 1/4 cup fresh grated parmesan cheese

 

Mushroom

  • 1 pound wild mushrooms sliced and/or quartered
  • 2 tb olive oil
  • 2 garlic cloves smashed
  • 2 sprig thyme
  • 2 tb butter

Others

  • Fresh Parmesan for presentation
  • 1/4 cup Fresh Chives finely sliced

Instructions

  1. In the medium pot have the broth hot, low to medium low heat.
  2. In the 12-inch pan heat to medium heat add 3 tb olive oil, when hot all shallots and cooks till soft/translucent but no color about 3 to 5 minutes.
  3. Add the rice and stir for about 3 minutes to toast the risotto, season with salt and pepper.
  4. Add the white wine and stir till it evaporates.
  5. Add the broth ¾ cup at a time, stirring till it evaporates and add more broth and repeat process. Risotto should take about 20 to 25 minutes, taste after 15 minutes to check doneness and seasoning.
  6. While risotto is cooking , heat up 10-inch sauté pan to medium high heat, add 2 tb olive oil and when hot add the mushroom and stir.  Season with salt and pepper.
  7. After 3 to 4 minutes of sauteing the mushrooms add garlic and thyme and cook for another 3 to 4 minutes
  8. When risotto is tender and creamy, taste for salt and pepper(be careful on the salt as parmesan cheese is salty).  Turn of heat and add 4 tb butter and ¼ cup fresh grated parmesan and mix gently.
  9. Heat up Mushrooms again and remove thyme sprig and add 2 tb butter and stir to melt.
  10. In a bowl/plate add the risotto to the center of the plate top with mushrooms, sprinkle chives and add more freshly grated parmesan
