Our Easter Sunday celebration was a delightful tribute to the arrival of spring. We crafted a delicious three-course meal to savor the season’s flavors.

We indulged in dishes like Asparagus and Mushrooms with Meyer Lemon Aioli, a succulent Shrimp Louie with avocado and cajun dressing, and delightful desserts such as Strawberry-Rhubarb Rice Pudding and Brown Butter Meyer Lemon Madeleines.

Our Garden 75, a rejuvenating spring-inspired concoction, served as a fitting element to complement our feast while the kids relished in mocktails blending seasonal fruits.

The meal was a perfect symphony of spring ingredients and flavors, inviting the warmth and vibrancy of the season into our home. It was such an easy dinner to put together. Welcoming the change of seasons with such culinary delights reminded us of the joy in celebrating nature’s abundance, encouraging you to embrace the essence of spring in your own gastronomic adventures.

This is how we do it when we have a banquet reception at the hotel so guests can grab and go…and mix and mingle!

Our amazing Strawberry-Rhubarb Rice Pudding is a delightful fusion of tart rhubarb (my favorite! just watch this video), sweet strawberries, creamy rice, and fresh vanilla beans providing the perfect taste of the season. The Brown Butter Meyer Lemon Madeleines are a burst of citrusy goodness and rich, buttery flavor, making for an indulgent treat that embodies the freshness of spring.

We love these as they are so dainty and is a bite-sized treat that makes it almost guilt-free. They’re best served nice, warm and fresh out of the oven. So we like to prepare the batter in advance, keep it in the pastry bag until we’re ready to go. It only takes 7-8 minutes to bake (depending on your oven)….such a great little treat and an easy recipe too!
